I haven’t been feeling my best lately, so dinner has been a hodgepodge of what we have available, turned into a one dish meal. Introducing: Seitan and Cauliflower Pot Pie.
A few nights ago, I discovered some puff pastry in the back of my freezer while trying to figure out dinner. Luckily it was still 4 pm so I was able to sit it out to thaw and make an absolutely delicious brussel sprout and ricotta tart.
The next night, puff pastry was calling me again. Since it comes in packs of two and I’m likely to forget it exists in my freezer (again), I decide to see what else I can come up with. And it was gooooood.
The beauty of this dish is that it all comes together in one cast iron skillet or shallow dutch oven, and can be modified to use whatever veggies you have on hand. Seitan and cauliflower go surprising well together. The seitan lends a nice and meaty texture, and the cauliflower gives it’s signature taste and a little bit of crunch.
This recipe, as well as most that I throw together (erm, “create”), can be easily substituted with items you have on hand. I was determined to make dinner without a trip to the store, so I did by just using what’s on hand.
